About FFOS Software

FFOS = Flavor Fragrance and Odor Simulator

This model for predicting taste and odor thresholds began in the fruit beverage industry where new flavors were being tested with little knowledge of their chemistry. The program predicted the odor threshold of flavors and off-flavors and other chemical properties.  In the fragrance industry the program was successful in formulating new products requiring novel fragrances from candles to soaps.  ODT values in air were added to the current program which we call Molecular Modeling Pro Flavor Plus.

Background

My abstract "A Flavor-Receptor Ellipsoid Model for Predicting Odor and Flavor Sensory Thresholds" was submitted to the American Institute of Chemical Engineers annual meeting in 2001.  The program was originally developed in Fortran with calculations based on Reid and Sherwood's Properties of Liquids and Gases 2nd Edition (1966) and Goldstein's Classical Mechanics (1950). Between 2002 to 2012 I worked as a consultant for several flavor and fragrance companies including Shaw Mudge & Company, Quest International and Givaudan.  Several patents were filed based on the FFOS program (see Patents below). In those years the program was refined and it proved to assist in development of new fragrances and flavors.  The program was reprogramed for desktop computers by James Quinn of Norgwyn Montgomery Software.  Without much advertisement it was sold worldwide to various companies.  In 2022 the Japan market opened with much success working with clients to improve the predictive model for their application. The program was marketed as Molecular Modeling Pro Flavor Plus. In 2024 James retired and passed the retail side to me.  We have been committed to customers and researchers interested in understanding the program and hope that this program can help others develop new applications.
